Red Szechuan berries or Szechuan pepper. Origin China. It is not a pepper but a berry of the rutaceae family. We will thus note notes of citrus fruits, camphor and exotic wood. Of a beautiful acidity, it is preferable to use it crushed in a mortar before tasting. This berry tends to bring bitterness to cooking.
Try it on asparagus, terrine of foie gras, braised beef cheek or soft chocolate.
