Timur berries, harvested at 2000m altitude in Nepal. Also called grapefruit pepper, with very pronounced citrus notes. Of the rutaceae family, just like Sichuan pepper, this berry is not a pepper. It is, botanically speaking, closer to orange trees than to pipper. Its extremely delicate perfume is not adapted to too powerful dishes. It is preferable to use it lightly crushed in a mortar just before tasting.
To be tested on seafood, lobsters. But also on fresh cheese. A little bit of seasoning on the traditional citrus fruit salad at the time of the holidays.
