Black pepper from Tellichery, India. Pipper Negrum
Appellation pepper in the heart of the Malabar coast in India. This pepper with a rather pronounced spiciness expresses balsamic notes on the nose and citrus fruits on the palate. A great persistence in mouth with some tannins present make it an unconditional ally of red meat.
The latter will be grilled or braised. Try it also on a piece of veal to spice it up.
In very light quantity, this pepper is also interesting on fresh strawberries.
To use preferably crushed in a mortar.
