Product Details



Agar-agar is a natural gelling agent, neutral in taste and translucent. Made from red algae, it is compatible with sugar and is ideal for cold and hot gelling applications.

Composition : Agar agar powder (E406)

Origin : Vegetable, ecologically produced red algae.

Suitable for gluten-free, vegan, vegetarian

Technical information :

  • Firm textured gelatin, translucent but not transparent.
  • Good compatibility with sugar.
  • Heat reversible.
  • Gels from 43ºC.
  • Heat resistant up to 70ºC when gelled.
  • Not resistant to freezing.

Instructions for use : Dissolve cold in the product to be gelled.
Disperse under strong agitation in boiling water (100 º C), until complete dissolution.
Leave to stand for proper gelling.
After cooling, the aqueous solution forms a gel which retains its texture at room temperature.

Store tightly closed in a cool, dry place at a maximum temperature of 30ºC.

Recommended dosage :

The higher the dosage, the harder the texture:

  • Very soft texture: 0.8g / 500ml
  • Soft texture: 1.5g / 500ml
  • Hard texture: 5g / 500ml
  • Very hard texture: 7g / 500ml
